Ferraro Family Bone Broth

We grew up on bone broth or Brodo as it was called in our household. My mother said it 'fixed' everything! It was til years later, I recognised the immense benefits of consuming bone broth regularly. Not only is bone broth a great winter staple, it is also nutritious & full of protein & great for your gut health & immune system. Best of all, it's so easy to make!
Ingredients
> Half stick of celery
> 2 Carrots
> 1 Brown onion
> 1 Tin of tomatoes
> 2 Tablespoon apple cider vinegar
> Pinch of Himalayan sea salt
> Your pick of Beef soup bones, beef marrow bones or chicken bones (we would use chicken marylands or a small whole chicken)
> For vegetarian/vegan option - replace the bones with 1 x cup Dried Shiitake Mushrooms, & 1 x Cup of Kale or Spinach
Method
* Roughly chop vegetables & add to large pot with the tomatoes, apple cider vinegar & your bones of choice.
* Fill the pot with water & bring to the boil. Once boiled, cover with a lid & reduce to a gentle simmer. Add more water if necessary to ensure bones & vegetables are always well covered.
* Simmer for 6-8 hours, removing any scum that may develop on the surface. (NB Vegetarian option requires less cooking time)
* When cooked, strain and remove any solid bits that may remain.
Note: Broth can then be placed in assorted containers, ice cube trays etc.
Use your broth as a soup base. Add to risotto's, casseroles or any dish that requires stock.
Will usually keep in the fridge for up to a week or in the freezer for 3 months.
For those of you that are too time poor to do the above, there are now many ready made broths available at your local supermarket!
